What to expect from Paraguayan grass-fed
If your reference is US or UK grass-fed, you'll notice similarities, and important differences.
Paraguayan grass-fed beef cooks faster than US feedlot grain-fed. Less intramuscular fat means heat penetrates quicker: medium on a 2.5 cm steak gets there a minute per side sooner. If you run your US recipe unadjusted, you'll overcook it.
The fat color is yellowish, not white. That's beta-carotene from the pasture (a signal of natural feed), not a flaw. For US buyers, it may be the first time you've seen yellow fat at a butcher.
The flavor is more mineral, more herbaceous, with less residual sweetness than grain-finished beef. It's the real taste of the animal, not the taste of grain reflected back in the meat. Some describe it as "more intense"; others as "cleaner."
How to order in Asunción
